A Hearty Meal During Hard Times
I've had one helluva week (yes, I know it's not even Wednesday), mostly struggling with publishing a print edition of my latest book. I won't bore you with all the technical details, but it involved converting an image to a printable PDF...and some really unfortunate sizing issues. Me and my cover artist are both worn out, but I've hopefully resolved it. Won't know for sure until I have a physical copy in my hands.
Anyway, the thing I wanna talk about today is food related.
I made a dish I haven't had in years, and is uncommon in Ohio, compared to my hometown in Georgia. It brings up happy memories of browsing the farmer's market and picking out our own bushel of peas to shell. Damn, I'm getting hungry and nostalgic, just thinking about it! Turnip or mustard greens and cornbread would be good companions right now...
Okay, I'll just cut to the chase here—I made black eyed peas. In a rice cooker! Well, I guess it's technically more of an instant pot? There are numerous settings for soup, quinoa, etc. But yeah, it never occurred to me that this could be a good way to prepare peas! We have a crockpot, but it's on the smaller side, and would require me to soak the peas first. Instead, I was able to cook dried peas in only two hours! Without soaking overnight!! I was so fucking jazzed to see it come to fruition.
And those peas tasted so damn good! I've got more dried beans in the cabinet, lentils, navy beans, and more. And quinoa to pair! I'm gonna have some of that for dinner tonight, a nice filling meal to carry me through the night. I'll likely have it for lunch for the next few days, until it's all gone. I don't think my girlfriend cares for either, which is just fine by me.
I'm gonna be eating well, nice hearty meals full of fiber! Good healthy meals to counter some of the lackluster food I've had lately.
